It's about time that I finally replace my pots and pans. I don't mind paying $$$ as long as they are high quality and excellent. They are investments, after all. What are the most trusted and reliable cookware in your kitchen? Any materials or brands I need to stay away from?

I recommend Staub cast iron pots. Well, I generally like cooking with cast iron as it retains heat exceptionally well, most untreated cast iron tends to rust easily. Staub doesn't require any oil conditioning, so it should be a much better option for you

Le Creuset Dutch oven - it will outlive you. 

I bought this flower-shaped cast iron cocotte (dutch oven) years ago, and it's one of the most frequently used pots in my kitchen. It's so versatile and can be used in the stove top, induction, and oven (to bake a flower-shaped brownie!). Le Creuset pots are perfect for slow cooking and braising. And sauces simmer to perfection. 

It is definitely on the heavier side, but my Le Creuset is on the smaller side (like 2.25 or 2.75 qt? It's definitely smaller than 3 qt), and I have no problem hand washing it. It is dishwasher safe, but I choose to hand wash it to keep it like new, lol.
