1. Allulose

  • Low-calorie and similar to sugar in taste and texture.
  • Use 1:1 for sugar, great for caramelizing.

2. Monk Fruit Sweetener

  • Sweet with no aftertaste, suitable for cakes, cookies, and frostings.
  • Replace 1:1 with sugar for many brands.

Here are some tips for success.

1. Always taste and adjust sweetness before baking when possible.

2. Sugar alternatives can affect texture and browning; you may need to experiment.

Erythritol is my go-to sugar replacement for all my sugary needs.

I use granular erythritol for cooking, but I use powdered erythritol for baking. It doesn't have a distinctive taste like monk fruit, and the ratio to sugar is almost the same (1 cup sugar:1 1/3 cup erythritol), so I don't have to use a ton.

Erythritol is zero net carbs sugar alcohol that doesn't affect blood sugar, so it's perfect for those who are on a Keto diet or are diabetic.

So Nourished's erythritol comes in 3 sizes - 1 lb, 2.5 lbs and 5 lbs.
