I clean my garbage disposal with baking soda and boiling water. I liberally sprinkle baking soda, and it forms a thick paste because the sink area is usually wet. I leave it for like half an hour and pour boiling water to flush out any gunk. It usually does the trick for me, and as long as you repeat the process regularly, you won't have much problem keeping the disposal clean. 

Every twice a week or so, I finish the process off with Plink's Garbage Disposal Freshener and Cleaner. It is supposed to clean and deodorize the disposal. You only need 1 drop. After I clean my disposal and check that it is free of any food scraps, I turn on the water to a slow stream and drop a Plink into the disposal. And I'm left with a burst of lemon scent :) 

Plink's cleaner is available in several fragrances, but my favorite is lemon. It's a very refreshing and invigorating lemon scent. 

Don't expect the lemon scent to linger for hours or anything though because it's supposed to clean and deodorize the disposal, not make it smell nice. 

This routine has been working out for me.
