My husband’s diet is completely GF, and this Paleo Pancake mix has been a life saver. The mix is made with almonds, coconut, cassava, eggs, and monk fruit; however, it can mimic the fluffiness of traditional pancakes.

I followed the instructions on the back, and it turned out phenomenally. I have not yet to try waffles with this, but I can confidently say that this mix makes delicious and healthy pancakes. My husband and I are going to be customers for life (or until we get sick of pancakes)!

The whole bag makes 22 medium-sized pancakes, and the packaging features a ziplock mechanism for airtight storage. Unless you’re entertaining or running an Airbnb business, having a zipper is very much appreciated!
The mix is slightly more expensive than traditional pancake/waffle mixes you can find at Walmart; however, I think it’s more than worth it for those who’re looking for GF pancake mixes without losing the flavor.

The mix blends well with water and resembles traditional pancake mix in terms of texture and consistency. I used a fork to mix, and it didn’t turn out lumpy at all. However, if you prefer a finer and smoother mix, use a whisk.
